In memory of Courtney, The Courtney Sipes Memorial Foundation is creating a cookbook entitled, Cooking for Courtney: Recipes and Memories from Family and Friends. This is one of many fundraisers that we are engaging in to help children realize opportunities in Courtney’s passions - art and music, and improve pedestrian safety, particularly where children
are at risk.
Courtney was a natural in the kitchen. From the youngest age her family involved her in our love of food and particularly as a vehicle to bring us together as a family. Eating together with busy schedules was a requirement and sometimes a challenge! Courtney mastered a few of her mom’s and grandmother’s recipes by taste not measurement in some cases – such as coleslaw, Broccoli casserole, corn casserole, baked chicken tenders, and fruit smoothies, and was always putting her unique twists on recipes and restaurant foods.
There were many traditions we enjoyed as a family that revolved around food. We envision the cookbook will be a wonderfully varied collection of recipes – favorites of Courtney’s, our families, friends and communities - from New York to Texas and beyond. It will also include a collection of special memories, stories and photos, as well as examples of how our families and friends connect with each other through food, and traditions.
Courtney inspires us every day to live life to the fullest, to think of others, and to value our loved ones. We hope that Courtney’s Cookbook will inspire others in the same way, and provide a connection to the circle of love this special little girl left behind.
